I love this wonderful example of predominantly Chardonnay based sparkling wine fresh from South Australia. An absolute beauty of a creamy textural, fun & most pleasing style brilliant for sharing with freshly shucked Tasmanian oysters, lightly pan fried scallops with Balsamic drizzle. The colour is very appealing being a middish deep pale straw with a lively, persistent bead which is lovely and fine, not course. Aromatics with this sparkling sensation are a fresh mix of tropical and green apples with hints of yeasty complexity you would expect from a good French style. The palate over delivers on fresh fruit and is balanced by crisp, cleansing acidity on the lingering finish.
