Grape variety: White Grenache, Clairette and Bourboulenc.
Colour : Pale yellow and clear.
Nose : Sour apple, hawthorn and white flowers.
Mouth : Fresh and well-balanced.
As soon as they arrive in the cellars, the grapes are pressed. The must is cold racked for 24 hours. Running water regulates the fermentation temperatures. The wine is ages in vats, without malo-lactic fermentation.It is bottled at the end of the winter, depending on the harvest.
