McPherson Basilisk Cabernet 2005 |

This wine opens up with some very strong colour, a dense inky-purple with a perfumed nose displaying summer cassis , blackberry & redcurrant. Blackberry and chocolate and concentrated rich berry flavours are the hallmark though overall. Balzac is another name for mourvèdre.
The palate is all upfront to begin and at once powerful, yet elegant with well-integrated fruit, some spicy French oak and fine-grained tannin to finish.
The grapes for this Cabernet Sauvignon have been blended with 10% of Mourvedre and were picked and crushed during the cool of night, thus ensuring the retention of varietal characters, while modern winemaking techniques were employed throughout.
Cold maceration of the fruit prior to fermentation helped to bring out colour and the wine’s primary varietal characters – such as blackcurrant and herbal fruit flavours. While still fermenting, the wine was transferred onto medium toast, French oak where it then spent 12 months, giving the wine a subtle smoke and spice character and adding a further dimension the overall style.
