Rustic in nature, the nose led by savoury spice of cedar and clove, and underpinned by blackberry, plum, dark chocolate and violets. Elegant yet powerful, the palate offers flourishes of charred beets, anise and eucalypt giving brightness to the palate as a montage of rich, ripe tannins from both vineyard site and careful oak selection mingle to deliver a firm, persistent finish. A wine with purpose and direction that is sure to reward you medium term patience.
The 2007 vintage was extremely dry due to the drought that was gripping Australia at this time and harvest occured three weeks earlier than normal. It goes without saying that Cabernet was in the same boat as most of our red varieties with yields extremely low. Drought affected vintages tend to produce smaller berries leading to a higher ratio of the colour and flavour-containing skin to juice which often is beneficial when aiming to produce superior quality wines. In the winemaking process we extended the skin maceration to extract the maximum of the phenolics (tannins, colour, flavour compounds). In addition, emphasis was put on careful aeration during fermentation to soften the tannin structure.
Pertaringa’s Understudy Cabernet is so named as it is just that; this wine is the next in line to our flagship red, the Pertaringa Rifle and Hunt Cabernet Sauvignon. No second fiddle, the Understudy Cabernet is a stylistic contrast to our Rifle and Hunt, and is traditionally vinified before maturation in French and American oak, with a view to immediate drinkability. Although this wine will undoubtedly cellar well, as have previous vintages, like all great Understudys, the 2007 won’t like to be kept waiting in the wings for too long before it performs. 40% Petit Verdot is included in this wine for added perfume, richness and mouth feel.
