35% Cabernet Sauvignon, 30% Cabernet Franc, 20% Merlot, 15% Petit Verdot.
Since 2007, Gemtree vineyards have been farmed biodynamically.
A multi layered generous concentrated front palate with oodles of flavour; a voluptuous mid palate and ripe elongated tannins that envelop the back end of the palate and create an ultimately seductive wine.
Aromas of violets, mint, currants, cassis, rose petals, roasted almonds, dark olive and dark chocolate, dried sausage.
The 2009 growing season presented us with good winter and spring rains. The warm days and cool nights leading up to harvest provided us with near perfect conditions. As a result, the 2009 wines have wonderful finesse and brightness.
Neither cloying nor over ripe, they display remarkable richness and vibrancy that will see them drinking well for the next 5-‐8 years.
Each Parcel of fruit is open fermented and aged in French Oak separately for 18 months. The Phantom Is then blended prior to bottling to maximise balance, structure, flavour and integration.
