Here is a little beauty! Vibrant bold magenta colour. Cassis, black cherry and pepper aromas with green undertones. The cabernet component provides blackberry flavours, with the merlot adding spicy notes. The palate is enriched by vanillin oak characterThe wine was fermented on skins with a neutral yeast strain to maximise fruit and enhance the naturally gentle tannin structure. The wine was then soft pressed and underwent complete malolactic fermentation on a mix of French and American oak. The wine was aged on oak for five months,then blended and filtered prior to bottling. The 2004 vintage in the river regions commenced with a cooler Decemberand January, resulting in more elegant and higher quality red wines. The grapes were sourced predominantly from a number of vineyards in theMurray Darling and Swan Hill regions of Victoria. The fruit was harvested atnight when the temperature was coolest to retain maximum fruit flavour.
