Region Yarra Valley
Appearance Bright red, garnet edge.
Bouquet Juicy Cabernet nose with lovely savoury, black cherry notes.
Palate Very medium bodied with structure and acidity. Richly textured, long, rustic and fine with good tannin. The Syrah and Nebbiolo are quite gentle on the Cabernet, so there is a lovely little leafy note to the blend and a touch of Italian bitterness.
Vintage Conditions In 2010 we experienced a cool growing season with timely rainfall. Fruit was mature and expressive at balanced alcohol and acidity levels. Picking dates ranged from the 9th to the 23rd February. Cracking year.
Winemaking The Cabernet component was planted in 1990, Nebbiolo in 2005, Syrah in 1994. Fruit is destemmed, crushed and tipped into both open and closed fermenters. The fruit undergoes natural fermentation, and once fermenting, is kept at a minimum of 25°C, and is left on skins for 30-60 days. The wine is pressed, settled overnight and gravity filled to new and used casks where is matured at 16°C for 12 months. The wine is then racked by gravity and the final blending completed.
Cellaring Now or over the next 8-10 years in a good cellar.
Suggested Cuisine Barbecued rosemary lamb or for something different, tuna chilli pasta.
