Wonderful aromas of cherry and spice with vanillin oak. The palate is a melange of red berries and blackberries that integrates perfectly with the spicy oak. It finishes off with fantastic length and tannin structure.
Various parcels of Shiraz came together to make the 2007 wine, these included a wide range of regions from Swan Hill up to the Barossa and Eden Valleys then back to Sunraysia. Also included with some of these Shiraz parcels some Viognier skins for co-fermentation. Fermentation was conducted on skins over a seven to ten day period to maximize fruit and enhance tannin structure and mouth-feel. Some of the new wines were pressed early, direct to barrique for barrel fermentation. All wines underwent complete malo lactic fermentation in tank or barrel and were matured in a range of new to five year old American and French barriques. The finished wine was aged for a further 12 months in barriques prior to blending, filtration then bottling.
