Light golden in the glass, the nose is fresh and delicate with aromas of green apple, strawberries and cream. Lively effervescence tapers nicely into the palate.
A dash of Vermentino (15%) added to the classic Pinot Noir / Chardonnay blend is a welcome input, adding green apple flavours to the textural complexity and creaminess of the Chardonnay. Good length on the palate, Pinot Noir bringing elegance to the finish.

The fruit for this wine was harvested during the cool of the night to ensure fruit temperature was low to preserve primary fruit flavours. This wine was fermented in stainless steel tanks to preserve primary fruit flavours.
This wine was fermented at 15˚ Celsius and we selected two yeasts - DV 10 and EC1118 – to ferment the wine. These yeasts are strong and neutral and help promote the clean, crisp characteristics that typify this wine style.
