Brilliant in colour with a very pale gold hue, aromas of citrus, pear, cashews, and fresh straw with some good flinty mineral notes in the background. The palate is refreshingly dry, with a graceful thread of acidity and the same aromatic characters evident on the palate. This is ideal for sharing (or not if you’d prefer) and will drink beautifully for at least another year or so.
Alan Meadows, Burghound: The nose immediately announces that this could be nothing other than Chablis as the softly citrus and floral nose carries notes of oyster shell and sea breeze. There is good richness and punch to the round, delicious and attractively fleshy middle weight flavors that possess good detail and length. This for is really quite good with fine intensity, depth and persistence.
FROM THE WINERY: In 2010, Romain Bouchard, an organic wine-grower in Chablis and his brother Damien, a young winemaker, created DRB, an exclusive range of wines of high expression. Grapes are purchased to a small selection of very serious wine-growers. Then the vinification is made in the modern winery of Pascal Bouchard, the family-owned company in Chablis. DRB wines are only single vineyards selections. There is no blending, each wine offers the expression of its own terroir.
The son of Chablisien winemaker Pascal Bouchard, Romain Bouchard purchased the tiny Domaine de la Grande Chaume in 2005. It consisted of two different parcels of vineyard totaling only 3.37 hectares. Romain immediately embarked on an ambitious restoration project to bring the vineyards up to EcoCert organic standards. He has never used a single chemical product and performs a lot of de-budding and early crop thinning as opposed to green harvesting to achieve the highest quality grapes at low yields. Natural products such as copper and sulfur along with plant extracts such as nettles, field horsetail and wicker are all that Romain employs to maintain health and natural plant vigor. At harvest he selects only the perfectly ripened clusters by hand leaving the rest behind. Vinification is performed at his family's winery, Domaine Pascal Bouchard. The vineyards received EcoCert organic certification in 2010.
