The palate has similar tropical and stone fruit flavours combined with subtle nutty barrel ferment characters, and good acidity. You wont find this everwhere as this small premium winemaker really covets quality merchants to represent their range to end customer and as such we are proud to offer you these wines for your cellar.
The winemaking process for this wine was pretty much identical to that of our premium Chardonnay. The fruit was crushed and airbag pressed into tank, settled and racked off gross lees, yeast inoculated and run into barriques for full barrel fermentation. Barrel age for this wine ranged from new (20%) through to four years old.
Paringa Estate was established by Lindsay & Margaret McCall in 1985. This is the third release of the Paringa Estate Peninsula range of wines. The fruit for this wine has been sourced from several Mornington Peninsula vineyards. The philosophy behind this second label is to purchase premium quality fruit and to produce an early drinking style of win.
