Good Pinot Gris has a certain subtle spice to it, only enough for you to notice it but never so much as to overpower the delicate structure and crispness of the flavour. Aromas of cardamom, nougat, peach, pear and quince are a perfect foil to a restrained and clean palate. Stone fruit and pear dominates the flavour with a light citrus edge to keep it interesting.
