Pale straw in colour with a lifted varietal bouquet encompassing ripe pear, apple, melon and white flowers. The palate has been crafted in the French style, offering elegant flavours of pear, apple and citrus with faint spice. Nicely textured and balanced throughout, this is drinking fantastically now, but will cellar well for another 2-3 years.

From the Winery
The fruit for this wine was selected from the Victoria and Angela blocks on the Taylor family estate in the Clare Valley.The grapes were harvested at night to preserve the fresh fruit characteristics and were gently whole berry pressed to reduce the chance of colour and phenolic extraction. After pressing, the juice was quickly chilled to 4°C and allowed to settle. Fermentation was carried out using an ester enhancing yeast at cool temperatures in stainless steel vessels. After minimal fining and filtration, the wine was bottled in July 2016.
