The 2010 Inigo Riesling is pale straw in colour with a tinge of green. Highly aromatic, with waxy orange blossom predominant, the nose displays typical character of pure Riesling. The palate is tight and lean but generous in flavour. Grapefruit and citrus flavours are prominent, with a mineral, dry finish that is long and crisp.
With so much character developing in the vineyard, it’s often said that if Riesling is picked at the right time, the wine is virtually made. All the winemaker has to do is to protect and maintain that character. Riesling’s desire to wear its heart on its sleeve still means that it can be sensitive and winemaking must be careful and compassionate. The fruit is gently pressed, taking great care not to allow oxygen to steal the flavour. The juice is kept very cool and carefully selected yeasts ferment to dryness at temperatures of around 12°C. Individual vineyard blocks are kept separate until after fermentation when blending occurs. The wine is bottled in August, the best way to capture Riesling’s fresh character.
Sevenhill was established in 1851 when the Jesuits who settled in the area planted vines to produce sacramental wine. From these modest beginnings, the Jesuits' focus on wine has remained, with Sevenhill adding to its sacramental wine production with an extensive range of table wines that are highly regarded throughout Australia and overseas.
As the only remaining Jesuit-owned winery in Australia, residing Jesuits are actively involved in Sevenhill's ongoing development in partnership with lay staff who share the ethos of building the Jesuit Mission to support works of charity and compassion throughout Australia.

The palate comes as no disappointment, with lilting citrus and passionfruit flavours and a long finish. Sometimes this level of fruit expression has a degree of reduction, but this wine is as fresh as a spring day.
