Wither Hills is very fortunate to have its Sauvignon Blanc plantings on an array of soil types. The winemaking philosophy is very much hands off and let the vineyard sites express themselves. A heavier crop than expected was harvested, but fortunately due to vine balance and the extended growing season (Indian Summer) we have captured a wonderful array of fruit flavours and characters. This year the vibrancy and power of the fruit in the wine is going to make the 2008 Sauvignon Blanc extremely memorable.

Displaying intense gooseberry and capsicum characters, the lingering soft flavours provide a beautifully ripe and powerful wine with an abundance of richness, uplifted by fresh acidity and an impressive long finish.
Cellaring: Both fresh and refreshing, this Wither Hills Marlborough Sauvignon Blanc is best consumed upon release, however will continue to develop mouthfilling fruit-driven flavours over the next two to three years.
Food Matching: The fresh vibrant nature of this Sauvignon Blanc makes it a wonderful accompaniment to delectable seafood dishes such as poached scallops in a lime-scented broth or pasta al dente topped with bacon, sundried tomatoes, parmesan and freshly torn basil..
