A really nicely made elegant wine from one of the Big Boys for the export market and meant to really excite the European drinker into a frenzy at this price for this amazing quality.
The wine displays a deep red colour with youthful purple hues. The bouquet is dark cherry and red forest berry, with almond and light perfume overtones. The palate shows black cherry and dark red fruits. Tannins are soft and the wine is medium bodied and unoaked really displaying terrific fruit depth and length. There is a lifted clean fresh fruit finish that provides structure and form to the overall wine. As Goldilocks mentioned in passing ...."Just right!'
Sourced from a selection of Australian vineyards our winemaker has selected parcels of Cabernet Sauvignon fruit showing exceptional depth and intensity of flavour that without the aid of oak maturation will show exceptional flavour and drinkability.
The grapes were harvested during the cool of night at optimum ripeness. After crushing and pressing, after fermentation temperatures were carefully controlled at around 20-28°C in stainless steel vessels. The wine was then allowed to settle before individual parcels were blended and bottled.
