A classic and aromatic Pinot Noir. Fragrant notes of red cherry, raspberry and violet combine with earthy, spicy hints. The palate opens with subtle red berry notes before building in complexity to exude a deeper black cherry and mulberry profile. These fruits are underpinned by intriguing spices and dried herbs reminiscent of thyme and sage. There is also a hint of chary oak giving the fruit a smoky complexity. Framed by fine, savoury and seductive tannins, the wine shows excellent palate extension.

WINEMAKING: In order to maintain whole berries, parcels of fruit were gently destemmed into small, open fermenters. The fruit was cold-soaked for three days prior to fermentation to maximise the extraction of bright colour and soft tannin. During the fermentation period, each parcel was monitored by the winemaker to determine the plunging and temperature regime.

After this alcoholic fermentation, the wine was pressed to French oak barriques for malolactic fermentation and maturation. Depending on the characteristics of the individual wines, some batches remained on malolactic lees while others were racked and returned to oak. Each vineyard patch was treated individually up until pre-bottling blending.
