Good red colour. Intense ripe fruit flavours of classical red and black berry fruits with a supple savoury note backed by pleasant oak characters. The palate is full, round and lingering with fine balance.
The 2008 season had a favourable weather pattern that produced a classical pinot noir. This pinot noir containing seventy six percent Martinborough grapes was made with traditional Burgundian techniques. The techniques used include a pre-fermentation maceration, wild yeast initiated fermentation and a postfermentation maceration to ensure the complex tannin structure. After pressing it was matured in French oak casks for 9 months.

Winemaker Allan Johnson is producing consistently superb wines, which reflect Palliser's prime vineyard sites in Martinborough. Whilst Palliser Estate and the Martinborough region have made their name from Pinot Noir, the Sauvignon Blanc is always one of New Zealand's finest.
