2005 vintage in Margaret River was near perfect for reds and whites in terms of both quality and yield. A cool spring/summer promoted slow growth and highly concentrated fruit flavours followed by a long warm late Autumn ensuring ideal sugar/acid/alcohol ratios. Irrigation management in the vineyard was minimal. The Merlot grapes in particular benefited from a heat wave that struck in late March, while the Cabernet enjoyed the long mild slow ripening conditions throughout April to obtain optimal ripeness.
Vinification took place in chilled rotary fermenters and gently pressed to refrigerated stainless steel tanks for completion of fermentation. After a period of up to 5 months the wine was transferred to older French oak barriques for maturation for 16 months before the final blending in November 2005.

A deep ruby colour with bright red hues. A classic year for Cabernet showing a deeply concentrated brooding nose of cassis liqueur, black currents, mulberries, menthol and dark chocolate. The nose is a reflection of the ripeness and generous fruit depth coming from the 2005 vintage. The wine is well balanced with soft supple tannins, sweet fruit and elegant acid structure. The refined palate offers a full bodied rich wine yet well harnessed and controlled by fine chalky tannin structure and raspberry conserve like acid. An opulent and varietal Cabernet that was made possible by near perfect vintage conditions, strategic vineyard selection and blending. This wine is best consumed within 6-8 years from bottling.

Like an old, faithful friend I keep turning to this wine. It is truley sensational & nevere lets me down! From the backyard barbeque to the romantic candle-lit dinner and all occassions in between. Bold, deep crimson, huge licks of luscious concentrated blackcurrent flavours and smooth silky sweet tannins combine to reflect Cabernet Sauvignon moving towards perfection with some time to integrate in the bottle!

Here lies a delightful Bordeaux type blend of mostly Cabernet and some wonderful finely textured tannins. Mature interlayered chocolate, plum and spice and oak all nestle gentley together to ensure a very good length to the palate. All those that tasted this little beauty were agog at how long the wine kept lasting in the mouth and truely a very serious wine.
