Here's a great example of what a little time in the bottle does to a Sauv Blanc that is built to last. It's amazing, the development of the aromatics and the integration of the fruit flavours! It takes it to a whole new level!
Visually, it's still a very pale straw in the glass. The nose is full of tropical notes and good herbaceous characteristics. The palate is fresh and fruity with a crisp acid finish. Tropical flavours including melon and lychee are nicely complemented by green herbaceous characters of capsicum and green pea.
Give this a whirl with some grilled salmon, Vietnamese cold rolls or a warm chicken Caesar salad. It's just divine!
Aromatic yeast selection coupled with cool fermentation is essential to preserve the fruit characters in this wine. Parcels of fruit are fermented separately and the best set aside for blending so that this wine can be released and consumed when drinking at its best.
